Go to a song and tap the Edit (pencil) button on the top right corner and tap on Edit (cmd-E).

Song info

Either tap on the "i" Song Info button or cmd-I (or iPad, Edit > Song Info) to edit the song's Title, Composer, Style and the default key signature for the song (the key the chords are in, in the Editor).
