Two settings control color. Theme sets the whole app light or dark (Light, Dark, or Automatic). Song Theme colors the chart itself, with Original, Focus, Calm, and Quiet.

 

Both are in Chord Chart Settings (the Aa button on iPhone, iPad, and Mac, or A on Android), and in Settings on Windows.
